Earl Grey is a style, not a fixed recipe. The one thing every version shares is bergamot, that fragrant Italian citrus; everything else, the base tea, the balance, the extra flavours, is the blender's to decide. Which is how I have ended up with a whole family of them, gathered here in one place.

There is one for every kind of Earl Grey drinker: a creamy, comforting classic that takes milk beautifully; a brighter, bergamot-forward Himalayan; a light, zesty Countess; an organic decaf for the evenings; and a green one for green tea lovers. There is even an honorary member, Orange Blossom Oolong, for when you fancy something Earl-Grey-adjacent but a little different.
