Tie Guan Yin (Iron Goddess of Mercy)
Tie Guan Yin or Iron Goddess of Mercy is one of the most famous Chinese balled oolongs. Legend claims that a farmer in Anxi County took it upon himself to care for a neglected shrine that he passed each day on his way to work. One night the Iron Goddess (Guan Yin) visited him in a dream and guided him to look for treasure behind the shrine. Fortuitously he found a tea shoot, which he planted in his tea garden and it brought him great richness. This modern style lightly baked Tie Guan Yin is refreshing, and fragrant with floral notes and a gentle sweetness. Forgiving to brew and good for multiple infusions, brew at 90°C for 3 minutes.
