Kukicha Organic Green
An unusual organic green tea from Japan, made entirely from stalks and stems removed during Sencha production. Like most tea production, in Sencha production the final stage involves removing fibrous content, dust etc, but unusually with Sencha, the stems and stalks are also removed. The fibre and dust are discarded, and the stalks and stems become Kukicha (Kuki = stalk, Cha = Tea). Because there is no leaf, Kukicha is low in caffeine. I think this tea makes a fab introduction to Japanese teas. Expect a flavour profile not dissimilar to Sencha (layers of buttered spinach, umami, subtle marine notes and a balanced astringency) but more delicate, sweeter and with nutty undertones.
