En Shi Yu Lu (Jade Dew) Organic
One of the famous teas of China, En Shi Yu Lu or Jade Dew is a unique steamed tea from En Shi City in Hubei Province. Today Chinese green teas are typically made by frying the leaves in a wok after plucking to kill the enzymes that would otherwise oxidise and darken the leaf. But around the time of the Tang Dynasty (618 - 907), when this tea was first produced, the Chinese were steaming the fresh leaves to kill the enzymes. This practice disappeared, and for centuries En Shi Yu Lu was also fried, but during the early 20th Century, the ancient method of steaming was revived. After steaming, the deep green leaves are hand rolled to release bold, complex flavours of vegetal layers, with a gentle astringency balanced by umami notes. Good for multiple infusions.
