Team Breakfast
This is my English Breakfast: breakfast tea as it should taste, with no twist, no frills and no funny business. It is the everyday, loose-leaf cup I would happily hand to anyone, a proper full-bodied brew to start the day.
It is a classic blend, built on Assam for body and backbone, with black teas from China and Kenya to round it out. The result is rich and malty with a note of cask oak, brisk enough to wake you up and smooth enough to keep you company all morning. It is a black tea, so yes, there is caffeine in it; this is a get-up-and-go cup, not a wind-down one. It is made for milk, as a breakfast tea should be, though it is perfectly good on its own if that is your preference.
A quick word on the name, because people do ask. The "Team" in Team Tea doesn't stop at my small business. It is the growers, the pickers and the makers, all the skilled hands it takes to bring a tea from a distant hillside to your kettle, and it is you, the people who brew it and enjoy it at the other end. From that distant hillside to your kitchen table, we are all part of one community, one team, of tea; and that, in the end, is where the name comes from.
Brew at 100°C for 4 minutes, and add milk to taste.

Brewing Notes || 1 teaspoon per cup, 100ºC, brew for 4 minutes.
