I have, for now, lost my source for Jung Jark, the organic green from Jeju Island. Yeongam Jungseon is the closest successor I have been able to find. It is not the same tea (this one comes from the mainland rather than Jeju, and every garden has its own signature), but it shares that same bright, umami-rich, lively character, and I think most people who loved Jung Jark will feel right at home with it.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003eThis is a bright, lively green from the southern Korean mainland, and one of the teas I'm happiest to have back on the shelf. Korean greens are genuinely hard to come by, Organic even more so.\u003c\/p\u003e\n\u003cp\u003eKorea has grown tea for well over a thousand years. The culture faded for a time, was revived in the 1800s, and today a strong domestic market means Korean teas remain a rarity internationally; most of what is grown is drunk at home, and relatively little is exported. This one comes from a single family garden in Yeongam, in Jeollanam-do on the southern mainland, first planted in 1965 and family-run ever since. The plants are grown organically from traditional indigenous cultivars, and the tea is made from the gentle May harvest, the one prized for its mild, rounded flavour. The leaves are steamed and then pan-roasted: the steaming draws out that sencha-like umami and seaweed quality, the pan-roasting rounds it off and keeps it mellow rather than sharp.\u003c\/p\u003e\n\u003cp\u003eI'll be candid about supply. I've been without its predecessor, Jung Jark, for months now, and Korean tea has been a real headache to source. This is the closest I've found, and I'm genuinely glad to have it. The garden is small, the harvest is seasonal, and it's organic.\u003c\/p\u003e\n\u003cp\u003eTo taste, it's medium-bodied, opening with a vibrant grassy aroma that's really inviting before you've even taken a sip. The palate is full of savoury umami with a gentle seaweed note (this is where it leans Japanese), and then a surprising fresh, almost minty lift right at the end.
