Kekecha Yellow


Kekecha Yellow is a superb yellow tea from Guangdong, China. Yellow teas are very rare and whilst initially similar to green teas, they undergo short periods called ‘Men Huang’ (Sealing Yellow), where the tea is rolled into cloth bundles and very gently heated. Originally it was thought that the tea fermented during these periods of Men Huang (much like a Puerh does), but the latest research by the UK Tea Academy suggests that actually the tea leaves are undergoing non-enzymatic oxidation. So what is non-enzymatic oxidation? Well it occurs when the carbohydrates in food are heated, as opposed to when the enzymes react with oxygen in the air, as they would in an oxidised tea such as black tea. Putting the science aside, the Sealing Yellow process results in a gentle spiciness, buttery roast dinner flavours and a top note of ripe mango, with less of the fresh grass that you would expect from a green tea. China has a long tradition of offering its finest teas to the Emperor. These teas became known as ‘tribute teas’ and Kekecha is one such tea. Very low in caffeine and excellent after a meal.
