Tai Ping Huo Kui (Monkey King)

Tai Ping Huo Kui, or Monkey King is one of the 10 famous teas of China. Grown high in the mountains of Anhui Province, the harvest is short, and the tea is produced in small batches by individual villages producing up to 10kg. Similar to Long Jing Dragon Well, the freshly picked leaves are initially pan-fried to stop oxidation, but then the leaves are rolled between layers of wire mesh before firing, giving them their striking flat appearance, and if you look closely you should see the cross-hatch indentation of the wire mesh! Expect a smooth tea with good body, a fruity tartness and a seductive aroma. Best brewed in a glass teapot or tall glass so that you can admire the distinctive leaves and elegant liquor. Good for multiple infusions.
