Shui Xian is the Narcissus (Water Sprite) varietal of Rock Oolong. Rock Oolongs are a family of dark roasted oolongs grown in the rocky soils of the Wuyi Mountains in Fujian, China. They are famous for their ‘Petrichor’ notes, a word that derives from the Greek for ‘stone’ and ‘fluid that runs through the veins of the Gods’. The Shui Xian varietal is a complex floral tea with layered notes of honey, petrichor and a gentle smokiness. For those new to oolongs, oolongs are partially oxidised teas and form a vast category between green (no oxidation) and black (fully oxidised) teas. At the lighter end of the spectrum, oolongs can resemble green teas, whilst the darker oolongs, such as this one make a great introduction for black tea lovers who might be new to drinking oolongs. Can be enjoyed with food, but delightful on its own so that the depth of flavour can be savoured.
